Before joining Chateau Eza as Chef de Cuisine in spring 2007, Axel Wagner was the Executive Chef of the three-star Michelin restaurant of the renowned French chef Georges Blanc in Vonnas. Axel Wagner has also been involved in the training and the creation of new menu's for Singapore Airlines and assisting Georges Blanc on his ventures abroad in Singapore, China, Switzerland amid other countries.
Axel received his formal training in his home country Germany. In 1990 he moved to France to work as Commis de Cuisine in restaurant "Kammerzell" in Strasbourg. In the following years, Axel worked in several restaurants in France, amongst others the Michelin-star restaurant of Pierre Orsi in Lyon, moving up to Chef de Cuisine in 1996 in restaurant Le Mont Joyeux in Meyzieu. In 2003 he received a Grand Prix D´Excellence and was a finalist of L´Académie National De Cuisine. At that time he was already working as Second de Cuisine in Michelin-star restaurant "Le Cep" in Fleurie, Beaujolais.
